LEMON THYME
There are over 100 varieties of thyme. Their scents vary greatly, depending on where they grow. Lemon thyme holds its own well alongside the more strongly fragranced wild thyme or serpolet. Beside its citrus scent, lemon thyme is distinguished by its larger, more rounded leaves with their hints of gold and silver, and its purple flowers.
Advice from the chef: to enjoy its pleasant perfume at its best, lemon thyme must be used as fresh as possible.
