Designing environmentally respectful events has become a major concern for us, without forsaking our fundamental values of generosity, refined dishes, and aesthetic staging. Building on these intrinsic values, our sustainable and eco-responsible commitments, our rigorous supply chains that respect the seasons, and our ambitious goal of “zero waste”, we have imagined and created Cool Green.

Cool Green is a unique and innovative reception, in the form of an initiatory stroll through a lush garden, discovering new ways to appreciate and celebrate the “sacrament of the vegetable”. From bucolic and rustic decoration to landscape-like dishes, everything breathes symbiosis with nature, in a light and joyous atmosphere. This reception also reflects the new urban lifestyles, where city dwellers cultivate their own garden on their balcony, favor roof gardens, and decorate their interiors with an infinite palette of shades of green.
Our chefs, always in pursuit of innovation, continually explore new culinary horizons. Through the use of seasonal vegetables, cereals, and aromatic herbs, they offer a bold and refined interpretation of these modest ingredients, thereby revealing their infinite palette of flavors and textures. This sophisticated “hypernatural” cuisine, hitherto practiced by only a few great names in international gastronomy, finally finds a festive dimension thanks to Potel & Chabot, who adapts it to large-scale receptions.
