Known as “golden soup”, “soup of the sun”, the bouillabaisse cooked by the fishermen of Marseille (or more accurately Massilia) was originally a workaday dish prepared on the beach after a gruelling time at sea. The fish not worth keeping for sale at the market were cooked in a large cauldron over a drift wood fire.
