Under the Empire, Mr Chevet founded a dynasty of famous caterers from his boutique in the Palais Royal.
Frequented by gourmets from across Paris, his boutique sold venison, foie gras, fish and pâté products.
Auguste Escoffier was Chef there between 1878 and 1884.
