Black from head to toe, Gascon pigs are the oldest breed of pigs in France.
They are thought to originate from the Nébouzan region of the Pre-Pyrenees, in southern France.
Rustic, energetic but unaggressive, Gascon pigs find their food in the undergrowth of oak and chestnut forests that are their natural habitat, as well as on the plains. They grow slowly and yield firm lard and a flavoursome, marbled meat.
