The Hyblaen Mountains (Monti Iblei in Italian) are a volcanic mountain range that overlooks Syracuse in south-eastern Sicily. The name derives from the Siculi king Hyblon, who reigned here and, in 728 BC, gave a portion of his territory to Greek colonists.
The “Tonda Iblea” olive tree is endemic here. With its knotted trunk and rough, dark bark, it thrives in the shallow, stony soil of the sun-drenched Hyblaen terraces. The olives are hand-picked before they mature, from late October onwards. Pressed within 24 hours, they yield a fruity and particularly sweet oil that carries hints of herbs and tomatoes…. a unique fragrance.
