NOIRMOUTIER BONNOTTE POTATOES

The Noirmoutier bonnotte is a potato flavoured by the sea.
It is cultivated in the traditional way, in sandy soil fertilised by kelp and a micro-climate shaped by the Atlantic. Harvested in early June, the bonnotte is the last of Noirmoutier’s early potatoes.
With its fine skin and firm, white flesh, it is best served in simple dishes that highlight its delicate flavour and subtle aroma.
